Pale ale and IPA

Term from the Brauwerkstatt brewing glossary, category “Beer styles”.

Explanation

Top-fermented, hop-forward beers from England. India pale ale (IPA) emerged in the 19th century as a heavily hopped export beer that survived the long sea voyage to India well. American versions with hops such as Cascade show citrus, grapefruit and pine aromas. Typical: pale ale 4.5–6.2 % ABV and 30–50 IBU, IPA 5.5–7.5 % ABV and 40–70 IBU.

What does brewing gypsum (calcium sulphate) do in beer?

  • It accentuates hop bitterness and makes the beer drier
  • It adds a smoky taste
  • It makes the beer sweeter
Show answer

Correct: It accentuates hop bitterness and makes the beer drier. Sulphate emphasises bitterness, chloride rather the maltiness. That is why gypsum suits pale ale and IPA.
