Fermentation temperature
Term from the Brauwerkstatt brewing glossary, category “Fermentation and yeast”.
Explanation
The most important lever for clean beer. Fermentation produces heat itself, so the beer is often 2–3 °C (36–37 °F) warmer than the room. Start at the lower end of the yeast’s range and let it warm up slightly towards the end so the yeast finishes cleanly.

What causes fusel alcohols?
- Fermenting too warm
- Storing too cold
- Too many hops
Show answer
Correct: Fermenting too warm. Fusel alcohols taste harsh and solvent-like. A controlled fermentation temperature prevents them.
