Juniper in beer
Term from the Brauwerkstatt brewing glossary, category “Ingredients”.
Explanation
In Scandinavia and the Baltic, farmhouse brewers place juniper branches in the lauter tun so the wort runs through them, or boil the brewing water with juniper. This gives the beer a resinous, woodland aroma and works as a filter at the same time. Typical of sahti, gotlandsdricke and koduõlu.
