Sahti
Term from the Brauwerkstatt brewing glossary, category “Beer styles”.
Explanation
Ancient Finnish farmhouse ale made from barley and often rye, brewed with juniper and hardly any hops. The wort is usually not boiled but filtered through a kuurna, a wooden trough lined with juniper branches. It is traditionally fermented with baker’s yeast. Sahti is cloudy and sweetish, tastes of banana, bread and juniper and has hardly any carbonation. It is protected as a traditional speciality in the EU. Typical: often around 8 % ABV.
