Final gravity
Term from the Brauwerkstatt brewing glossary, category “Measurements and calculations”.
Explanation
The extract left after fermentation, measured with a hydrometer. Together with the original gravity it gives the alcohol content.

What is final gravity?
- The alcohol in the beer
- The hop oil
- The sugar left in the beer after fermentation
Show answer
Correct: The sugar left in the beer after fermentation. A high final gravity makes beer sweet and full; a low one makes it dry and lean.
What does a forced fermentation test show?
- How bitter the beer will be
- How far the wort can ferment at most
- How high the pH is
Show answer
Correct: How far the wort can ferment at most. A wort sample ferments out warm with plenty of yeast. Its final gravity shows when the main fermentation is complete.
What is original gravity?
- The alcohol content of the finished beer
- The amount of dissolved solids, mainly sugar, in the wort before fermentation
- The amount of hops per litre
Show answer
Correct: The amount of dissolved solids, mainly sugar, in the wort before fermentation. Original gravity is given in degrees Plato or as specific gravity (SG). Together with final gravity it gives the alcohol.
